We were delighted when Chef, Dan Leaver, accepted our invitation to cook up a storm in the Woodlands kitchen last month. On Valentine’s night, some very lucky guests were treated to a delectable three-course locally sourced dinner in the candlelit Clubhouse.
What’s Cooking?
Dan served up west coast oysters on crushed ice with shallot, chilli, ginger and lemon vinaigrette to start. Then came a whopping seared and sliced 12oz local beef fillet steak served with marinated west coast scallop skewers and grilled langoustines. Dessert was a dreamy white and dark chocolate mousse with Madagascan vanilla cream, fresh berries and peanut praline.
We had hoped that our couples would be able to enjoy their food beneath the stars on the terraces of their secluded lodges; however, the good old fashioned Scottish weather prevailed, and guests were invited to take shelter in the cosy confines of the Clubhouse.

The pop-up restaurant was a roaring success, and we cannot wait to invite Dan back to cook at Woodlands again.
In the meantime, Dan is going to develop several delicious and deluxe ready meal options for guests to take back to their lodges, pop in the microwave and enjoy. This clever culinary concept will be launched later this month, so watch this space!
